About the Recipe
Inspired by a new Osmow's (shawarma spot) opening up in the neighbourhood. This bowl brings all those bold, savoury flavours into a fresh, feel-good meal at home. Marinating the chicken overnight lets the spices fully infuse creating tender, juicy bites packed with warmth and depth. Paired perfectly with the chickpea rice that is fragrant and gently spiced perfectly bringing everything together. It's satisfying, nourishing and balanced with protein, fibre, carbs and healthy fats. Dig in and enjoy every vibrant, flavour packed bite!

Ingredients

For the chicken
8 chicken thighs
½ tbsp ground cumin
½ tbsp ground turmeric
½ tbsp ground coriander
½ tbsp paprika
½ tsp cinnamon
½ tsp crushed red pepper flakes
1 onion - thinly sliced
6 cloves of garlic - finely minced
1 lemon - juiced
1/3 cup olive oil
1 tsp Salt
1 tsp black pepper
Chickpea rice
2 cups jasmine rice
1 can chickpeas - drained and rinsed
3 cups water
1 tbsp olive oil
1 tsp garam masala
1 tsp salt
For the bowl
Romaine lettuce - chopped
Vine tomatoes
Cucumber - chopped
Quick TzatzikiÂ
¼ cup greek yogurt
3-4 cloves of garlicÂ
¼ tsp dill
½ tbsp lemon juice
Salt and pepper to taste
Preparation
Combine all chicken + marinade ingredients in a glass bowl and mix until well combined. Cover and refrigerate for 1 hour or overnight for best results
Preheat grill to medium high heat
Prepare the chickpea rice by cooking the jasmine rice as instructed by the package.
Place marinated chicken on the grill and cook for 3 minutes per side or until fully cooked. *if you’d like grilled vine tomatoes, brush with olive oil, sprinkle with salt and pepper and place on the grill with the chicken. Grill until blistered - about 5-6 minutes.
Once the rice is cooked, add chickpeas and spices. Fluff rice until chickpeas and spices are fully combined into the rice
Combine ingredients for the quick tzatziki in a small bowl
Assemble the bowl by adding the base -Â a serving of rice, chopped cucumber, romaine lettuce and sliced chicken is layered on top. Spoon a dollop of the quick tzatziki on top and enjoy!!
