A go-to comfort food casserole. What's the difference between this and a shepherd's pie? The meat filling. This variation uses ground beef whereas a shepherd's pie will use ground lamb! Enjoy this deeply savoury meal that has a layer of ground beef and veggies topped with a fluffy yet crispy layer of golden garlic mashed potatoes. The perfect big batch meal to pair with roasted/steamed vegetables to create the perfectly well-balanced dish!

Ingredients
For the potato topping:
2.5lb yellow potatoes - peeled & quarteredÂ
1 tbsp butter
½ cup milk of choice
1 tsp salt
½ tsp black pepper
3-5 cloves garlicÂ
For the beef:
2 lb extra lean ground beef
1.5 cups beef or chicken broth
2 tbsp olive oil - divided
1 large carrot - finely chopped
1 medium yellow onion - finely chopped
2 celery stalks - finely chopped
3-5 garlic cloves - finely minced
1 cup frozen corn
1 cup frozen peas
1 tsp thyme
1 tsp salt
½ tsp ground pepper
¼ cup flour
1 tbsp worcester sauce
Preparation
Bring a large pot of water to a boil and place the peeled and quartered potatoes in the pot along with the garlic. Boil until potatoes are tender and a fork can easily be pierced through them
While the potatoes boil, heat a pan to medium high heat. Add 1 tbsp of butter and add ground bison to the pan, break apart with a wooden spatula. Add thyme, salt and pepper and cook for 6-8 minutes until the meat is browned, stir occasionally. Add the carrots, celery and onion. Cook until fragrant, about 5-7 minutes. Add garlic and cook for another minute
Add the flour and worcester sauce, cook for 1 minute until well incorporated
Add broth, frozen peas, carrots and corn. Bring to a boil then reduce to a simmer for about 5 minutes, stirring occasionally. Preheat oven to 400 degrees.
Drain cooked potatoes and garlic into a colander then return to the pot. Mash the potatoes and mix in milk, butter, salt and pepper until all ingredients are mixed together. Taste and adjust salt/pepper to desired taste
Assembly! In a baking dish, add the meat and spread around until level. Add the whipped potatoes on top and spread into an even layer. Use a fork to score the top for a nice crispy top!
Bake uncovered for 30-40 minutes until the top is golden brown and crispy. Let sit for 5-10 minutes before serving. Serve with a side of roasted vegetables or salad for a well-balanced meal!
