About the Recipe
Whip up a quick and healthy poke bowl with fresh salmon marinated in a delicious tamari sesame sauce! Make these bowls your own by choosing your own custom toppings. Be creative and satisfy your taste buds!
You’ll be surprised how easy these are to make and will quickly become a staple in your weekly meals. The key is to get good quality, sashimi grade salmon - the flavour will be buttery and mild. Y U M!!!
Suggestions to make your bowl nutritious and delicious - ensure you include a good mix of 1-2 cups of colourful vegetables (bok choy, spinach, kale, napa cabbage, carrots, broccoli, cucumber, radishes, shiitake mushroom) and serve over a bed of rice (sushi rice if you prefer the sticky texture, but any rice will work)
Garnish options: sesame seeds, pickled ginger, nori, green onion etc.

Ingredients
For the Poke:
1lb sashimi grade salmon filet - de-skinned and cut into ½ inch cubes
1 tsp sesame oil
¼ cup tamari (or soy sauce if not gluten free is preferred)
For the base:
Cooked Sushi Rice (or any preferred rice)
Vegetables and toppings of choice* see about this recipe for suggestions

Preparation
Prepare your salmon by removing the skin and cutting into ½ inch cubes. In a glass bowl, drizzle sesame oil and tamari and whisk together until fully combined. Add in salmon, stir, cover and refrigerate while you prepare the remainder of your bowl.
Cook rice as directed on the package - preferably sushi grade if you like the sticky texture!
Prepare the toppings of choice - my preferred choice is a mix of steamed vegetables (bok choy, broccoli, edamame), sliced carrots for crunch, edamame, and garnished with pickled ginger, nori, and sesame seeds.
