Ingredients

3lb Beef Chuck Roast
1 medium onion - diced
1 large orange - juiced
1/2 cup Beef Stock
2 medium Chipotle chiles in adobo
2 tbsp sauce from chipotle chiles
6 cloves garlic
1/4 cup lime juice
2 tbsp apple cider vinegar
1 tbsp dried oregano
2 tsp cumin
2 tsp sea salt
1 tsp freshly cracked black pepper
2 bay leaves
Preparation
Step 1: Rinse beef chuck roast under cold water and pat dry with a paper towel. Cut into 2 inch cubes and place in slow cooker
Step 2: In a blender, combine beef broth, chipotle chiles, garlic, lime juice, orange juice, apple cider vinegar, oregano, cumin, sea salt, black pepper and blend until smooth. Pour over cubed beef in the slow cooker and mix until the beef is fully covered. Add chopped onion and bay leaf.
Step 3: Cook on low for 8-10 hours
Step 4: Shred the beef using two forks. Place shredded beef and extra liquid in a pan and cook over medium heat until liquid has evaporated and all the juices have been soaked up!
Step 5: Serve wrapped in taco shells or a burrito bowl. This shredded beef is so delicious it is versatile as a main character with any side!
