About the Recipe
This simple, one-pan recipe is perfect when you are tight for time and also looking for a delicious, nutritious and satiating meal. In 30 minutes you'll have a yummy meal and a clean kitchen! This meal is packed with protein, carbohydrates, healthy fat and fibre. Keeping you full, satisfied and high on energy!

Ingredients
1lb ground turkey
2 sweet potatoes - peeled and diced
1 red bell pepper - chopped
2 cups spinach
1 can black beans (398ml)Â - drained and rinsedÂ
½ red onion - peeled and finely chopped
1 tbsp olive oil
Seasoning
1 tbsp chili powder
½ tbsp ground cumin
½ tbsp garlic powder
1 tsp oregano
1 tsp salt
½ tsp ground pepper
Preparation
In a large skillet heat olive oil over medium high heat. Add ground turkey and season with salt and pepper. Cook until browned and thoroughly cooked
Remove turkey from pan and add sweet potato and onion. Add 1/4 cup water, cover and cook for 10-12 minutes - until sweet potatoes are tender. Stir occasionally
Add peppers cover and cook for another 5 minutes, stir occasionally
Add spinach and black beans, cook until spinach is wilter - about 2 minutes
Add cooked turkey and spices into the pan, stir to combine and allow to simmer for 5 minutes. Taste and adjust the seasoning if needed
Serve hot! Option to add greek yogurt or cheese if desired
